The Unseen Cuisine® 18-Week Advanced Culinary Program is designed for:
- Blind and low-vision students who have completed the six-week Foundations Course and are ready for more rigorous culinary training.
- Students who want to become stronger, more independent cooks for home and everyday life.
- Individuals building culinary skills that may support continued education, vocational development, or entry-level food-service opportunities.
- Sighted cooks who want to strengthen their culinary skills through a sensory-based, nonvisual approach.
- Students ready to move beyond foundational instruction and develop greater technique, judgment, consistency, control, and confidence in the kitchen.
Prerequisite: Completion of the Culinary Cockpit™ Foundations Course.
From Foundations to Advanced Culinary Training
The six-week Culinary Cockpit™ Foundations Course builds the systems, sensory awareness, organization, safety, and kitchen confidence students need to cook with greater independence.
The 18-Week Advanced Culinary Program builds on that foundation through more demanding culinary training, including professional food preparation, classical techniques, multi-component meal production, advanced workflow, culinary problem-solving, and increasingly independent execution.
Students continue using the Culinary Cockpit™ throughout the program, but at a higher level. The focus shifts from learning how to navigate the kitchen to developing stronger technique, judgment, consistency, control, and confidence as a cook.
What You Will Develop
The Unseen Cuisine® 18-Week Advanced Culinary Program builds on the systems established in Foundations and applies them to more demanding culinary techniques, production tasks, and independent execution.
Students continue using the Culinary Cockpit™ and nonvisual sensory cues while strengthening skills in professional knife work, classical cooking methods, stocks and sauces, protein cookery, vegetables and starches, baking fundamentals, flavor development, sanitation, workflow, meal production, and culinary problem-solving.
The goal is to move beyond foundational kitchen confidence and develop stronger culinary competence that can support advanced home cooking, continued culinary education, vocational development, and entry-level food-service opportunities.
Advanced Culinary Technique
Apply the Culinary Cockpit™ to more complex cooking methods, professional food preparation, classical techniques, and increasingly challenging dishes.
Professional Kitchen Skills
Strengthen knife skills, mise en place, sanitation, organization, timing, workflow, and multi-component meal production through a sensory-based, nonvisual approach.
Independent Culinary Judgment
Develop the ability to troubleshoot, make adjustments, manage multiple cooking processes, and make informed decisions using technique, sensory information, and culinary understanding.
